Zucchini Oat Bites

240 g ~ 2 medium zucchinis
120 g oat flour or ground oats
60 g almond or cashew butter
15 g ~ 2 tbsp nutritional yeast
½ tbsp baking powder

1 tsp garlic powder

Steps
1Cut zucchini lengthwise and scoop out the center with a spoon - this will prevent excess moisture during baking.
2Grate hollowed out zucchini using a medium grater.
3Add grated zucchini to a medium-sized mixing bowl. Add oat flour (or ground oats), baking powder, nutritional yeast, nut butter, salt and spices.
4Mix to combine until dough-like.
5Preheat the oven to 200°C (400°F) Fan. Shape the dough into ~ 12 bite-sized nuggets and arrange on top of a baking tray lined with baking paper.
6Bake in the middle of the oven for 15 minutes.
7Transfer to a plate.
