Roasted Zucchini With Black Beans & Corn

1 kg zucchini
240 g ~ 1 can cooked black beans
160 g frozen corn
½ tbsp olive oil for roasting
1 tsp salt

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut zucchini into bite-sized pieces. Add to an oiled casserole dish, preferably cast iron. Drizzle or spray zucchini with olive oil.
2Mix to coat and roast in the middle of the oven for 20 minutes.
3Rinse and drain black beans. Add rinsed black beans and frozen corn to the zucchini. Sprinkle with salt and mix to combine.
4Roast for another 10 minutes.
5Transfer zucchini mix to plates.
6Sprinkle it with cashew parmesan.
