How to Make Non-Dairy Parmesan

To make a simple non-dairy parmesan cheese all you need is cashews (fat), nutritional yeast and garlic powder (flavor) and some salt. In a pinch, you can only use cashews and salt and make an individual portion using a coffee grinder. The following recipe uses a blender and makes quite a bit of cheese you can then store in the freezer and use as needed. This is by far the easiest and the most convenient method and it allows you to have tasty non-dairy parmesan on hand at all times. 

It tastes just like the real thing and you can use it to top any roasted vegetables, pasta or rice dishes. 

Note: you can replace cashews with blanched almonds for a higher nutritional value if you want.

Ingredients:

140 g ~ 1 cup cashews
15 g ~ 2 tbsp nutritional yeast
½ tbsp garlic powder
2 tsp salt

Instructions:

1. Add all of the ingredients to a blender.
2. Blend on pulse for ~ 3 seconds.
3. Add to a zip-lock bag. Keep in the freezer for up to 4 months.
