Yogurt Mushroom & Onion Pizza

400 g oyster mushrooms
1 medium onion
1 medium tomato
½ tbsp olive oil for roasting
¼ tsp salt
⅛ tsp ground black pepper

Dough:
180 g all-purpose flour
120 ml plain yogurt | soy, oat or cashew
60 ml water
1 tbsp baking powder
1 tbsp olive oil

Cheese:
240 ml milk | soy, oat or cashew
15 g ~ 3 tbsp nutritional yeast
20 g ~ 2 tbsp cornstarch
7 ml ~ ½ tbsp olive oil
7 ml ~ ½ tbsp apple cider vinegar
30 ml plain yogurt | soy, oat or cashew
1 tsp salt

¼ cup water
1 tbsp baking powder
1 tbsp olive oil

1 cup milk | soy, oat or cashew
2 tbsp nutritional yeast
2 tbsp cornstarch
½ tbsp olive oil
½ tbsp apple cider vinegar
2 tbsp plain yogurt | soy, oat or cashew
1 tsp salt

Steps
1Preheat the oven to 200°C (400°F) Fan. Shred oyster mushrooms using your hands. Thinly slice onion and tomato. Add shredded mushrooms and sliced onions to a baking tray lined with baking paper. Spray or drizzle with olive oil and sprinkle with salt. Stir to coat.
2Roast in the middle of the oven for 20 minutes. Stir with a spatula and roast for another 5 minutes.
3In the meantime, make the dough. Add flour and baking powder to a medium-sized mixing bowl.
4Whisk to combine. Add yogurt and water.
5Mix with a spoon to combine. Set aside.
6Make the sauce. Add milk, nutritional yeast, cornstarch, oil, vinegar and salt to a small saucepan.
7Whisk to combine.
8Set heat to medium (induction #4) and cook for 2 minutes or until the milk warms up. Whisk continuously until the sauce thickens ~ 30 seconds. Whisk the sauce really well so you don't have any clumps. Add yogurt.
9Whisk until smooth.
10Transfer the dough on top of a baking tray lined with baking paper. Drizzle with olive oil.
11Oil your hands and spread the dough as much as possible. Make it the shape you want.
12Top with mushrooms and onions.
13Top with the sauce.
14Garnish with tomatoes and sprinkle with freshly ground black pepper.
15Bake in the middle of the oven for 15 minutes at the same temperature. Serve hot.
