Tomato & Cucumber Salad With Seeds

2 medium cucumbers
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp balsamic vinegar
1 tsp oregano
½ tsp salt
⅛ tsp ground black pepper

Steps
1Toast the seeds:

a) in a non-stick frying pan for 3 minutes;
b) in the oven for 3 minutes at 180°C (360°F) Fan; 
c) in an air-fryer for 3 minutes.
2Cut tomatoes and cucumbers into bite-sized pieces and add to a salad bowl.
3Sprinkle it with salt and dried oregano and drizzle with balsamic vinegar.
4Mix to coat.
5Top the salad with toasted seeds and sprinkle with freshly ground black pepper.
