Tofu & Oat Tiramisu

Base:
60 ml espresso
40 g ~ 6 tbsp oat flakes, fine

Cream:
200 g firm tofu
60 ml milk | soy, oat or cashew
30 ml maple or agave syrup

Garnish:
1 tsp cocoa powder

7 oz firm tofu
¼ cup milk | soy, oat or cashew
1½ tbsp maple or agave syrup

1 tsp cocoa powder

PREP TIME10 minutes
CHILL TIME30min or overnight

Steps
1Use two small bowls for two portions. Add half of the oat flakes and half of the espresso to each.
2Mix with a spoon and flatten. Set aside to soak.
3Add tofu, milk and syrup to a blender (small cup). Protein Boost: replace syrup with vanilla protein powder. Skip syrup, add 30 ml (~2 tbsp) extra milk and 15 g (~1 tbsp) of vanilla protein powder.
4Blend until smooth ~ 60 seconds, to make the cream.
5Top the soaked oat flakes with the cream.
6Cling film and refrigerate for 30 minutes or overnight to set.
7Use a small sieve to sprinkle cocoa powder over the cream.
