Sweet Potato With Black Beans

1 large or 2 small sweet potatoes
240 g ~ 1 can cooked black beans
30 g ~ 2 tbsp tomato paste
10 ml ~ ½ tbsp maple or agave syrup
½ tsp smoked paprika (optional)
½ tsp garlic powder
½ tsp salt
Optional Topping:
4 tbsp avocado mayo
⅛ tsp ground black pepper

Steps
1Preheat the oven to 200°C (400°F) Fan. Wash and cut the potato into two halves. Place on top of a baking tray lined with baking paper.
2Roast in the middle of the oven for 40-45 minutes or until cooked through and soft to the touch. Flip it over.
3In the meantime, make the beans mix. Drain and rinse black beans. Add rinsed beans, tomato paste, syrup, smoked paprika, garlic powder and salt to a small mixing bowl.
4Mix and mash using a fork or your hands (wear a food grade glove). Set aside.
5Top each potato with the bean mix and roast for another 5 minutes.
6Transfer to plates.
7Drizzle with the avocado mayo and sprinkle with freshly ground black pepper.
