How to Make Avocado Mayo

Avocado is high in magnesium, vitamins B6, C, E and Folate. It is also high in healthy fats and fiber. You can make a single avocado last you a few days if you turn it into mayonnaise. You can then use it to top sandwiches, veggie patties and salads. All you need is a teaspoon of vinegar, ¼ teaspoon of salt and some water.

To make the avocado mayo, use a 1:1 ratio of water to a pitted and peeled avocado. If you have a small avocado ~ 120 g (~4 oz), you will need 120 ml (½ cup) of water. The following recipe will make 240 ml of avocado mayonnaise.

Ingredients: 
120 g ~ 4 oz ~ 1 small avocado
120 ml ~ ½ cup water
1 tsp vinegar, any type
¼ tsp salt

Instructions:
1. Add all of the ingredients to a blender. You can use an immersion blender, a mini food processor or even a whisk with a very ripe avocado. 
2. Blend - or whisk, until smooth ~ 60 seconds. Place in a tupperware and keep in the fridge for up to 4 days. Use as needed.
