Roasted Zucchini With Yogurt Sauce

1 kg zucchinis
½ tbsp olive oil for roasting
¼ tsp salt

Yogurt Sauce:
300 ml plain yogurt | soy, oat or cashew
2 tbsp fresh dill
1 tsp apple cider vinegar
½ tsp onion powder
½ tsp garlic powder
½ tsp salt

Optional Garnish:
⅛ tsp ground black pepper

2 tbsp fresh dill

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut zucchini lengthwise and then into bite-sized pieces.
2Arrange on top of the baking tray lined with baking paper in a single later. Drizzle or spray with olive oil and sprinkle with salt. Mix to coat.
3Roast in the middle of the oven for 15 minutes.
4In the meantime, make the sauce. Add yogurt, dill, vinegar, onion powder, garlic powder and salt to a mixing bowl.
5Mix to combine.
6Spread the sauce over a plate.
7Top with roasted zucchini.
8Sprinkle with freshly ground black pepper.
