Roasted Zucchini With Onions

500 g zucchini
2 medium onions
2 tbsp fresh dill
½ tbsp olive oil
1 tsp garlic powder
¼ tsp salt

2 tbsp pumpkin seeds, toasted
⅛ tsp ground black pepper

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut zucchinis into bite-sized pieces. Quarter the onions and slice them into strips. Add to a baking tray lined with baking paper.
2Drizzle with olive oil - or use an oil spray. Add dill, sprinkle with garlic powder and salt. Mix well to combine.
3Roast in the middle of the oven for 20 minutes.
4Transfer to a plate and garnish with toasted pumpkin seeds. Sprinkle with freshly ground black pepper.
