Roasted Zucchini With Onions

1 kg zucchini
2 medium onions
1 tsp garlic powder
1 tsp paprika or cayenne
½ tbsp olive oil for roasting
½ tsp salt

2 tbsp cashew parmesan

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut zucchini into bite-sized pieces. Quarter and thinly slice the onions. Add to a baking tray double lined with baking paper.
2Sprinkle it with salt, garlic powder, paprika - or cayenne pepper, if you like spicy food.
3Drizzle or spray with olive oil. Mix to coat.
4Roast in the middle of the oven for 20 minutes. Stir with a spatula and roast for another 20 minutes.
5Transfer to plates.
6Top with cashew parmesan.
