Walnut & Fig Oat Cookies

120 g oat flour or ground oats
120 ml milk | soy, oat or cashew
1 tsp baking powder
100 g ~ 4 large dried figs
30 g walnuts

Steps
1Preheat the oven to 180°C (360°F) Fan. Add oat flour (or ground oats) and baking powder to a small mixing bowl.
2Whisk to distribute. Add milk.
3Mix to combine to make the cookie batter.
4Chop figs and add to the batter.
5Mix to combine.
6Scoop 6 portions onto a baking tray lined with baking paper.
7Shape each into a disk using a spoon.
8Chop walnuts and top each cookie. Press the walnuts into the batter so they don’t come off after baking. Note: you can mix walnuts into the batter but this method gives your cookies roasted walnut flavor and additional crunch and texture.
9Bake in the middle of the oven for 20 minutes. Allow to cool for 5 minutes on a tray.
10Transfer to a serving plate.
