Roasted Green Beans & Chickpeas With Mustard Dressing

500 g frozen greens beans
480 g ~ 2 cans cooked chickpeas

Dressing:
30 g ~ 2 tbsp mustard
15 ml ~ 1 tbsp water
15 ml ~ 1 tbsp apple cider vinegar
15 ml ~ 1 tbsp agave (optional)

Optional Garnish:
8 almonds, chopped
⅛ tsp ground black pepper

16 oz ~ 2 cans cooked chickpeas

2 tbsp mustard
1 tbsp water
1 tbsp apple cider vinegar
1 tbsp agave (optional)

Steps
1Preheat the oven to 200°C (400°F) Fan. Rinse and drain chickpeas. Add rinsed chickpeas and frozen green beans to an oiled casserole dish, preferably cast iron. Drizzle or spray zucchini with olive oil.
2Mix to coat and roast in the middle of the oven for 10 minutes. Stir with a spatula and roast for another 10 minutes.
3In the meantime, make the dressing. Add mustard, water, vinegar and agave, if using, to a jar or a cup.
4Whisk together until smooth using a mini whisk or an electric mini milk frother. Set aside.
5Transfer roasted beans and chickpeas to plates.
6Drizzle with the mustard sauce.
7Top with chopped almonds and sprinkle with freshly ground black pepper.
