Creamy Sweet Potato Pasta

30 g breadcrumbs
1 tsp olive oil

240 ml milk | soy, oat or cashew
120 g ~ 1 medium cooked sweet potato
40 g cashews
10 g ~ 2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1 tsp salt

¼ cup cashews
2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1 tsp salt

Steps
1Fill a deep cooking pot (20 cm ~ 8 inch) with water. Bring to a boil. Add pasta to the pot and stir.
2Reduce heat to low and simmer the pasta, uncovered, for 12 minutes - or according to the time given in the packaging instructions. Taste the pasta to make sure it’s soft and cooked through. Drain.
3In the meantime, make the sauce. Add milk, cooked sweet potato, cashews, nutritional yeast, garlic powder, onion powder and salt to a blender.
4Blend until smooth.
5Add the sauce to the cooked pasta.
6Mix to combine. Cook, stirring continuously, for 1-2 minutes until the sauce is piping hot.
7Transfer to oven-safe plates.
8Top with breadcrumbs and spray or drizzle with olive oil.
9Bake in the middle of the oven for 8 minutes. Serve hot.
