Coconut Creamy Tofu With Carrots

250 g ~ 4 medium carrots
200 g firm tofu
60 ml coconut milk
2-3 dried dates

⅛ tsp cinnamon

Steps
1Add tofu, coconut milk and dates to a blender (small cup).
2Blend for 60 seconds. Shake the cup - or mix the contents with a spoon or a spatula. Blend for another 60 seconds, or until smooth.

Protein Boost: Add 30 g (2 tbsp) of protein powder and 60 ml (¼ cup) more milk then blend again until smooth ~ 1 minute.
3Add creamy tofu to small bowls.
4Peel and slice carrots lengthwise. Add to the tofu.
5Sprinkle tofu with cinnamon.
