Cinnamon Roll Cookies

20 g ~ 1 tbsp maple or agave syrup
15 ml ~ 1 tbsp water
1 tsp vinegar, any type
½ tsp baking powder

Steps
1Preheat the oven to 160°C (360°F) Fan. Add almond butter, maple syrup, water and vinegar to a small mixing bowl.
2Whisk to combine.
3Add flour and baking powder.
4Mix using a spoon or your hands (wear a food-grade glove) until combined and dough-like. Set aside.
5Add syrup and cinnamon to a small bowl or a cup. Mix to combine to make cinnamon syrup.
6Add the dough to a clean flat surface or a piece of baking paper. Roll into a rectangle.
7Spread cinnamon syrup on top of the dough using a spoon.
8Roll the dough into a roll.
9Cut into 8 portions.
10Flatten each using your hands and add to a baking tray lined with baking paper. Brush with the remaining syrup.
11Bake in the middle of the oven for 15 minutes.
12Transfer to a serving plate.
