Cauliflower Steaks With Garlic Cauliflower Puree

1 kg ~ 1 medium cauliflower
2 bulbs garlic
2 tbsp olive oil for roasting
120 ml milk, soy, oat or cashew
1 tsp onion powder
½ tsp ground cumin
1 tsp salt

Garnish:
2 tbsp spring onions
⅛ tsp ground black pepper

Steps
1Preheat the oven to 400°F (200°C) Fan. Cut cauliflower into two then cut again from the center to get two steak-like pieces. Break the rest of the cauliflower into florets. Add to a baking tray lined with baking paper. Add whole garlic bulbs. Drizzle or spray with olive oil.
2Roast in the middle of the oven for 20 minutes.
3Take out of the oven. Remove the cauliflower florets and the garlic bulbs. Flip the cauliflower steaks over and roast for another 10 minutes.
4In the meantime, remove the garlic skin. Add cauliflower florets and peeled garlic to a mixing bowl.
5Add milk, onion powder, ground cumin and salt.
6Blend using an immersion blender until pureed.
7Transfer puree to plates and spread with a spoon or a spatula.
8Add roasted cauliflower steaks.
9Garnish with spring onions and sprinkle with freshly ground black pepper.
