Roasted Cabbage With Yogurt Sauce

Ingredients

½ medium cabbage
½ tbsp olive oil, for roasting
¼ tsp salt

Yogurt Sauce:
400 g plain yogurt, soy or cashew
1 tbsp apple cider vinegar
1 tbsp dried dill
½ tbsp garlic powder
½ tbsp onion powder
½ tsp salt

Garnish:
15 g hazelnuts, sliced
2 tbsp fresh parsley
¼ tsp ground black pepper

Steps
1Preheat the oven to 200°C (400°F) Bottom Heat. Slice cabbage into 8 wedges. Arrange on top of a baking tray lined with baking paper. Sprinkle it with salt. Spray or lightly oil the wedges with olive oil all over.
2Roast in the middle of the oven for 20 minutes. Flip the wedges over and roast for another 10 minutes.
3Add yogurt, vinegar, garlic powder, dill and salt to a mixing bowl.
4Mix to combine.
5Spread the sauce on top of plates.
6Add roasted cabbage wedges.
7Garnish with spring onions and sprinkle with ground black pepper.
