Cabbage With Mince

Ingredients

500 g ~ ¼ medium cabbage
1 tbsp olive oil for frying
¼ tsp salt

Mince:
80 g ~ 1 cup dry plant-based mince*
2 tbsp tomato paste
1 tbsp soy sauce
1 tbsp olive oil for frying
½ tbsp agave or maple syrup
1 tsp onion powder
1 tsp garlic powder

Yogurt Sauce:
200 g plain yogurt | soy, oat or cashew
1 tbsp fresh dill
1 tsp apple cider vinegar
1 tsp garlic powder (optional)
¼ tsp salt

* double the amount if using ready plant-based mince

Steps
1Preheat the oven to 200°C (400°F) Fan. If using dry mince, rinse it really well under running water using a sieve to rehydrate it. Shake the sieve to drain any excess water.

Skip this step if using ready plant-based mince.
2Add mince, tomato paste, syrup, soy sauce, onion and garlic powder to a small mixing bowl.
3Mix to combine using a spoon or your hands (wear a food-grade glove). Set aside.
4Cut cabbage into bite-sized pieces. Add to an oiled casserole dish, preferably cast iron. Spray or drizzle with olive oil. Sprinkle with salt and mix to coat. Cover with a lid or a sheet of foil.
5Roast in the middle of the oven for 10 minutes. Stir with a spatula and roast for another 10 minutes.
6Add mince to the cabbage.
7Mix to combine.
8Roast, covered, for another 10 minutes.
9In the meantime, make the yogurt sauce. Add yogurt, vinegar, garlic powder, dill, if using, and salt to a mixing bowl.
10Mix to combine.
11Spread the sauce on top of plates.
12Top with the cabbage and mince mix. Sprinkle with freshly ground black pepper.
