Cabbage & Mince Soup

Ingredients

Metric


150 g ~ ¼ small cabbage
1 small carrot, grated
400 g ~ 1 can chopped tomatoes
80 g ~ 1 cup dry plant-based mince*
20 ml ~ 1 tbsp agave or maple syrup
720 ml ~ 3 cups water

Salt & Spices:
1 ½ tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp ground coriander
½ cup ground cumin

Optional Garnish:
200 g plain yogurt
1 tbsp fresh parsley or dill

* double the amount if using ready plant-based mince

Cooking Pot

Steps
1If using dry mince, rinse it really well under running water using a sieve to rehydrate it. Shake the sieve to drain any excess water. Skip this step if using ready plant-based mince.
2Cut cabbage and grate the carrot. Alternatively, use a ready cabbage & carrot mix. Add all of the ingredients to a large cooking pot.
3Mix and bring to a boil. Cook over low heat for 30 minutes. Partially cover the pot with a lid to allow steam to escape. 
4Transfer to bowls.
5Top with yogurt.
6Garnish with fresh parsley or dill. Sprinkle with freshly ground pepper for taste.

Pressure Cooker

Steps
