Broccoli Apple Salad With Almond Dressing

300 g frozen broccoli
1 medium apple, diced
40 g arugula
40 g dried cranberries
⅛ tsp ground black pepper
Dressing:
30 ml ~ 2 tbsp milk | soy, oat or cashew
30 g ~ 2 tbsp almond butter
7 ml ~ ½ tbsp apple cider vinegar
½ tsp onion powder
⅛ tsp salt

¼ cup dried cranberries

Dressing:
2 tbsp milk | soy, oat or cashew
2 tbsp almond butter
½ tbsp apple cider vinegar
½ tsp onion powder

Steps
1Preheat the oven to 200°C (400°F) Fan. Arrange frozen broccoli (take it directly from the freezer) on top of a baking tray lined with baking paper.
2Roast in the middle of the oven for 10 minutes.
3In the meantime, make the dressing. Add almond butter, milk, vinegar, onion powder and salt to a jar or a cup.
4Whisk together until smooth using a mini whisk or an electric mini milk frother. Set aside.
5Add arugula to a plate.
6Cut broccoli into bite-sized pieces and add to the plate.
7Top with diced apple.
8Drizzle with the almond sauce.
9Garnish with dried cranberries and sprinkle with freshly ground black pepper.
