Tofu Pesto Pasta

160 g pasta, any type

Pesto:
200 g firm tofu
30 g fresh basil or parsley
15 g ~ 7 halves walnuts
2-3 cloves garlic
1 tsp salt

Optional Garnish:
⅛ tsp ground black pepper

Steps
1Fill a deep cooking pot (20 cm ~ 8 inch) with water ~ 2 lt. Bring to a boil then add pasta.
2Reduce heat to medium and simmer the spaghetti for 12 minutes - or according to the time given in the packaging instructions. Taste the spaghetti to make sure it’s soft and cooked through. Drain.
3In the meantime, make the pesto. Add tofu, basil, walnuts, garlic and salt to a mini food processor.
4Blend until combined ~ 60 seconds.
5Add pesto to the pasta.
6Mix to combine. Tip: you can stir fry for another 30-60 seconds until piping hot for the garlic to lose its bite.
7Add to plates and sprinkle with freshly ground black pepper.
