White Bean & Pea Puree With Mushrooms

Ingredients

400 g oyster mushrooms
1 tbsp soy sauce

Puree:
240 g ~ 1 can cooked white beans
240 g frozen green peas
120 ml milk | soy, oat or cashew

Salt & Spices:
1 tsp onion powder
1 tsp garlic powder
½ tsp salt

Optional Garnish:
2 tsp sesame seeds
⅛ tsp ground black pepper

8 oz ~ 1 ½ cup frozen green peas

Steps
1Preheat the oven to 200°C (400°F) Fan. Shred oyster mushrooms into strips using your hands and add to a large mixing bowl. Drizzle with soy sauce.
2Mix to coat.
3Arrange coated mushrooms on top of a baking tray lined with baking paper in a single layer. Give them plenty of room.
4Roast in the middle of the oven for 15 minutes. Stir with a spatula and roast for another 15 minutes.
5In the meantime, add frozen peas to a small saucepan. Cover with plenty of water and bring to a boil.
6Scoop out 4 tablespoons of peas out of the saucepan and set aside for garnish. Drain white beans and add to the saucepan.
7Boil for 60 seconds and drain.
8Add drained peas and beans, milk, salt and spices to a blender (large cup).
9Blend for 60 seconds. Shake the cup - or mix the contents with a spoon or a spatula. Blend for another 60 seconds, or until smooth.
10Transfer puree to plates and spread over using a spoon or a spatula.
11Top with roasted mushrooms.
12Garnish with peas and sprinkle with sesame seeds and freshly ground black pepper.
