White Bean & Pea Puree With Mushrooms

400 g oyster mushrooms
1 tbsp soy sauce
240 g ~ 1 can cooked white beans
160 g frozen green peas
120 ml milk | soy, oat or cashew

Salt & Spices:
1 tsp salt
1 tsp onion powder
½ tsp garlic powder

Optional Garnish:
40 g green peas
2 tsp sesame seeds
⅛ tsp ground black pepper

½ cup milk | soy, oat or cashew

2 tsp sesame seeds
⅛ tsp ground black pepper

Steps
1Preheat the oven to 200°C (400°F) Fan. Shred oyster mushrooms into strips using your hands and add to a large mixing bowl. Drizzle with soy sauce.
2Mix to combine.
3Arrange coated mushrooms on top of a baking tray lined with baking paper in a single layer. Give them plenty of room.
4Roast in the middle of the oven for 15 minutes. Stir with a spatula and roast for another 15 minutes.
5In the meantime, make the puree. Add cooked white beans, peas, milk, salt and spices to a medium-sized saucepan (20 cm ~ 8 inch). Mix to combine and bring to a simmer.
6Blend using an immersion blender until pureed - or to desired consistency.
7Transfer puree to plates and spread over using a spoon or a spatula.
8Top with roasted mushrooms.
9Garnish with peas and sprinkle with sesame seeds and freshly ground black pepper.
