Sweet Potatoes With Avocado Sauce

2 medium sweet potatoes
½ tbsp olive oil for roasting

1 medium avocado
120 ml water
15 g fresh parsley
½ tbsp apple cider vinegar
½ tsp salt

Steps
1Preheat the oven to 200°C (400°F) Fan. Peel and cut potatoes into wedges. Arrange on top of a baking tray lined with baking paper. Lightly coat or spray with olive oil.
2Bake in the middle of the oven for 20 minutes. Flip them over and roast for another 10 minutes or until the wedges are cooked through and crispy on the outside.
3In the meantime, make the sauce. Peel and de-stone the avocado. Add avocado, water, parsley, vinegar and salt to a mini food processor or a blender.
4Blend until smooth.
5Transfer potato wedges to plates and serve with the sauce on the side.
