Stollen Bites
Ingredients

120 g almond milk
80 g all-purpose flour
50 g almond butter
40 g almond flour
20 ml maple or agave syrup
4 g active dry yeast
¼ tsp salt
¼ tsp ground cardamom
⅛ tsp ground nutmeg

20 g ~ 2 tbsp raisins
1 tbsp almond milk for coating
1 tbsp powdered sugar

3 tbsp almond butter
⅓ cup almond flour
1 tbsp maple or agave syrup
¼ tsp active dry yeast
¼ tsp salt
¼ tsp ground cardamom
⅛ tsp ground nutmeg

1 tbsp almond milk for coating
1 tbsp powdered sugar

Steps
1Add flour, almond flour, yeast, salt, cardamom and nutmeg to a small mixing bowl.
2Whisk to distribute.
3Add milk, syrup and almond butter.
4Mix with a spoon until combined.
5Cover with towel or cling film and leave in a warm place to ferment for 30 minutes. Fold 4 times going clockwise using a spoon, cover and set aside to ferment for another 30 minutes.
6Add raisins.
7Fold with a spoon just enough to incorporate.
8Scoop ~ 16 portions onto a baking tray lined with baking paper using a spoon.
9Set aside to proof for another 30 minutes.
10Preheat the oven to 160°C (320°F) Fan. Bake in the middle of the oven for 20 minutes.
11Brush each bite with milk and sprinkle with powdered sugar. Tip: if you have a spice grinder, you can make powdered sugar by grinding regular sugar using the grinder for 10 seconds.
12Transfer to a serving plate.
