Cheesy Roasted Broccoli

Ingredients

500 g frozen broccoli

Sauce:
240 ml milk, soy or cashew
2 tbsp nutritional yeast
2 tbsp cornstarch
½ tbsp olive oil
½ tbsp apple cider vinegar
¼ tsp salt
2 tbsp plain yogurt, soy or cashew

Optional Garnish:
15 g almonds, chopped
¼ tsp ground black pepper

1 lb frozen broccoli

Steps
1Preheat the oven to 200°C (400°F) Fan. Arrange frozen broccoli (take it directly from the freezer) on top of a baking tray lined with baking paper. Roast in the middle of the oven for 10 minutes.
2In the meantime, make the cheese sauce. Add milk, nutritional yeast, cornstarch, vinegar, olive oil and salt to a small saucepan (16 cm ~ 6 inch).
3Whisk together and bring to a simmer. Whisk and simmer until thickens then add yogurt and whisk until combined.
4Pour the sauce onto the plate and spread it with a spoon or a spatula.
5Add roasted broccoli.
6Garnish with chopped almonds and sprinkle with fresh ground black pepper.
