Protein Tofu Chocolate Cake

400 g firm tofu
180 ml milk | soy or cashew
60 g cashews
60 g ~ 2 scoops vanilla protein powder*
60 g cocoa powder*
30 g cooking chocolate

2 oz ~ ½ cup cashews
2 oz ~ 2 scoops vanilla protein powder*
2 oz ~ ⅔ cup cocoa powder*
1 oz cooking chocolate

PREP TIME15 minutes
CHILL TIMEovernight
TOTAL TIME15min + overnight
Steps
1Add milk and cashews to a blender (large cup).
2Blend until smooth ~ 2 minutes.
3Add tofu.
4Blend until smooth ~ 2 minutes.
5Add cocoa powder and vanilla protein powder. Alternatively, use chocolate protein powder - whichever you have on hand.
6Blend until smooth ~ 2 minutes. Note: It’ll thicken as you blend it. If using a small blender, mix the batter with a spoon halfway and continue blending. Or blend it in batches.
7Line a cake tin (15 cm ~ 6 inch) with baking paper. Transfer the batter into the lined cake tin.
8Flatten the batter using a spoon or a spatula. Cover with clingfilm then place in the fridge overnight.
9Cut or grate the chocolate. Sprinkle over the cake.
10Remove the cake from the tin and transfer onto a serving plate. Peel off the baking paper. Keep refrigerated before serving.
