Potato Fritters

2 medium potatoes
30 g ~ 3 tbsp potato starch
1 tbsp olive oil for frying
½ tsp onion powder
½ tsp garlic powder
½ tsp salt
⅛ tsp ground black pepper

Steps
1Peel and grate the potatoes. Add to a small mixing bowl.
2Add potato starch, onion powder, garlic powder, ground black pepper and salt.
3Mix to combine.
4Preheat a frying pan, preferably cast iron. Add olive oil and tilt the pan to coat. Split the potato mix into 6 portions and spoon each onto the pan.
5Cover the pan with a lid and fry the fritters for 10 minutes, flip them over then fry for another 5 minutes or until golden brown on each side.
6Transfer to a serving plate.
