Coconut Oats With Pineapple

80 g ~ 1 cup oat flakes
240 ml ~ 1 cup coconut milk
240 ml ~ 1 cup water
240 g pineapple, fresh or canned
20 ml ~ 1 tbsp maple or agave syrup

Optional Topping:
2 tbsp coconut flakes

Steps
1Slice and dice the pineapple. Add all of the ingredients to a cooking pot.
2Mix to combine.Stir and bring to a simmer then reduce heat to very low (induction #2). Cover the pot with a lid.
3Cook, covered, for 5 minutes. Turn the heat off and let sit, covered, for another 5 minutes.
4Transfer to bowls.
5Top with coconut flakes.
