Oat Pita Breads

120 g oat flour or ground oats
240 ml water
1 tbsp olive oil

Steps
1Add water to a medium size saucepan. Bring to a boil.
2Turn off the heat and add oat flour (or ground oats). Tip: If you don’t have oat flour, you can grind oat flakes using a grinder or a blender.
3Mix to combine using a spoon until thick and dough-like. Set aside to cool for a couple of minutes.
4Add olive oil.
5Knead the dough for a minute or so until oil is incorporated.
6Split into 4 portions and roll each one into a ball.
7Place the dough on top of a baking sheet then cover with another baking sheet. Use the saucepan (or any heavy object with a flat base) to flatten the dough as much as possible.
8Lift the top sheet. You should have 4 pita breads.
9Preheat a non-stick frying pan. Set heat to medium. Lightly oil the pita breads or spray them with olive oil. Place lightly oiled pita bread into the pan. Fry for 2 minutes.
10Flip over and fry for another 2 minutes. Repeat with the rest of the pita breads.
11Transfer to a plate. Cover with a kitchen towel to prevent the pita breads from drying out until serving.
