Steps
Add water to a medium size saucepan. Bring to a boil.
Turn off the heat and add oat flour (or ground oats). Tip: If you don’t have oat flour, you can grind oat flakes using a grinder or a blender.
Mix to combine using a spoon until thick and dough-like. Set aside to cool for a couple of minutes.
Add olive oil.
Knead the dough for a minute or so until oil is incorporated.
Split into 4 portions and roll each one into a ball.
Place the dough on top of a baking sheet then cover with another baking sheet. Use the saucepan (or any heavy object with a flat base) to flatten the dough as much as possible.
Lift the top sheet. You should have 4 pita breads.
Preheat a non-stick frying pan. Set heat to medium. Lightly oil the pita breads or spray them with olive oil. Place lightly oiled pita bread into the pan. Fry for 2 minutes.
Flip over and fry for another 2 minutes. Repeat with the rest of the pita breads.
Transfer to a plate. Cover with a kitchen towel to prevent the pita breads from drying out until serving.
