Lettuce Salad With Almond Dressing

30 g spring onions

Dressing:
30 ml ~ 2 tbsp milk | soy, oat or cashew
30 g ~ 2 tbsp almond butter
7 ml ~ ½ tbsp vinegar or lemon juice
½ tsp onion powder
¼ tsp salt

Steps
1Make the dressing. Add milk, almond butter, vinegar (or lemon juice), onion powder and salt to a jar or a cup.
2Whisk together until smooth using a mini whisk or an electric mini milk frother. Set aside.
3Wash lettuce leaves and spring onions really well under running water, pat dry and cut into bite-sized pieces. Alternatively, wash and dry using a salad spinner then cut. Add to a medium-sized mixing bowl.
4Add the dressing.
5Mix to coat.
6Transfer to a salad bowl.
