Lentil Bites

Ingredients

200 g ~ 1 cup green lentils
480 ml ~ 2 cups water
2 tbsp nutritional yeast
2 tbsp tomato paste
2 tbsp ground flaxseed
40 g walnuts, crushed

Salt & Spices:
1 tsp salt

1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp cayenne pepper
½ tsp ground cumin

Optional:
200 g yogurt mayo

Steps
1Rinse and drain lentils. Add rinsed lentils and water to a medium-size cooking pot (20 cm ~ 8 inch, preferably cast iron).
2Bring to a boil then reduce heat to very low (induction #3). Stir, close the lid and cook lentils over very low heat for 45 minutes or until lentils are soft and cooked through and all the water has evaporated.
3Add nutritional yeast, tomato paste, ground flaxseeds, crushed walnuts, salt and spices.
4Mix well until combined.
5Preheat the oven to 200°C (400°F) Fan. Shape into bite-sized balls and arrange on top of a baking tray lined with baking paper.
6Bake in the middle of the oven for 15 minutes.
7Transfer roasted lentil bites to plates and serve with a side of yogurt mayo.
