Green Beans With Creamy Mushroom Sauce

400 g frozen green beans
1 medium onion, sliced
30 g breadcrumbs

Sauce:
70 g cashews
15 g dried mushrooms, shiitake
120 ml milk | soy, oat or cashew
1 tbsp sweet miso paste
½ tbsp cornstarch
1 tsp garlic powder
¼ tsp salt

½ oz dried mushrooms, shiitake
½ cup milk | soy, oat or cashew
1 tbsp sweet miso paste
½ tbsp cornstarch
1 tsp garlic powder
¼ tsp salt

Steps
1Add cashews and dried shiitake mushrooms to a medium saucepan. Cover with water and bring to a boil. Reduce heat to low and simmer for 15 minutes. Drain.
2Add cooked cashews and mushrooms to a blender. Add milk, miso paste, cornstarch, salt and garlic powder and blend until smooth. Set aside.
3In the meantime, preheat the oven to 200°C (400°F) Fan. Add frozen green beans and sliced onion to a baking tray lined with baking paper. Roast in the middle of the oven for 15 minutes.
4Add the mushroom sauce to the beans and onions and mix.
5Top with breadcrumbs and return to the oven. Roast for another 5 minutes.
6Transfer to a plate. Serve hot!
