Cumin Rice With Tofu

Ingredients

400 g firm tofu
100 g white rice
240 ml water
1 tbsp soy sauce
2 medium carrots, grated

Salt & Spices:
½ tbsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp salt

Optional Garnish:
2 tbsp fresh parsley
¼ tsp ground black pepper

Steps
1Add soy sauce to a medium-size cooking pot (20 cm ~ 8 inch, preferably cast iron). Break tofu into bite-size pieces using your hands and add to the pot.
2Mix and stir-fry over medium heat for 5 minutes to allow extra moisture to evaporate.
3Rinse rice really well. Add rinsed rice, grated carrots, salt and spices to the tofu.
4Mix to combine and add water.
5Bring to a simmer and reduce heat to very low (induction #2). Cover the pot with a lid and cook over low heat for 15 minutes. Turn off the heat and let rest, covered, for another 5 minutes.
6Transfer to plates.
7Garnish with fresh parsley. Sprinkle with freshly ground pepper.
