Creamy Basil Tofu With Tomatoes

200 g baby tomatoes
400 g firm tofu
120 ml milk | soy, oat or cashew
15 g nutritional yeast
20 g fresh basil
2 cloves garlic
1 tbsp balsamic vinegar
½ tsp salt

Steps
1Cut baby tomatoes lengthwise. Add to a mixing bowl and drizzle with balsamic vinegar. Mix to combine and set aside to marinade.
2Add tofu, milk, nutritional yeast, basil, garlic and salt to a blender.
3Blend until smooth ~ 2 minutes.
4Split into two portions and spread the cream tofu on top of plates using a spoon or a spatula.
5Top with tomatoes.
6Garnish with fresh basil leaves and sprinkle with freshly ground black pepper.
