Cranberry Pistachio Cookies

2 g ~ 1 tsp baking powder
40 g almond butter
40 ml maple syrup
30 ml almond milk
30 g cranberries
30 g pistachios, chopped

Steps
1Preheat the oven to 160°C (320°F) Fan. Add flour and baking powder to a small mixing bowl.
2Whisk to distribute. Add almond butter, milk and syrup.
3Mix to combine until you form a firm dough.
4Add cranberries and chopped pistachios.
5Lightly knead to incorporate.
6Transfer to a clean surface or a piece of baking paper. Roll into a thick tube.
7Cut into 8 portions.
8Flatten with your palm and shape into round cookies. Add to a baking tray lined with baking paper.
9Bake in the middle of the oven for 15 minutes.
10Transfer to a serving plate.
