Chickpea & Walnut Patties

Ingredients

240 g ~ 1 can cooked chickpeas
30 g oat flour or ground oats
15 g ~ 8 halves walnuts, crushed
15 g ~ 1 tbsp tomato paste
7 ml ~ ½ tbsp maple syrup
1 tsp olive oil for frying

Salt & Spices:
½ tbsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt

Flaxseed Gel:
1 tbsp ground flaxseed
2 tbsp water

Optional:
200 g yogurt mayo

Frying Pan Method

Steps
1Make flaxseed gel. Add ground flaxseed and water to a small mixing bowl. Mix to combine and set aside for 5 minutes to make flaxseed gel. 
2Rinse and drain cooked chickpeas. Add rinsed chickpeas, crushed walnuts, tomato paste, maple syrup, salt and spices to the mixing bowl.
3Mash using a fork, an immersion blender or your hands (wear a food grade glove) to combine.
4Preheat a lightly oiled frying pan and set heat to low (induction #3). Split the mix into 6 portions, wet your hands and shape into patties. Add to the pan and cover with a lid.
5Fry for 3 minutes. Flip the patties over and fry for another 3 minutes.
6Add patties to a plate. Serve with a side of yogurt mayo.

Oven Method

Steps
1Preheat the oven to 200°C (400°F) Fan. Make flaxseed gel. Add ground flaxseed and water to a small mixing bowl. Mix to combine and set aside for 5 minutes to make flaxseed gel.
2Rinse and drain cooked chickpeas. Add rinsed chickpeas, crushed walnuts, tomato paste, maple syrup, salt and spices to the mixing bowl.
3Mash using a fork, an immersion blender or your hands (wear a food grade glove) to combine.
4Split the mix into 6 portions, wet your hands and shape them into patties. Place the patties on top of a baking tray lined with baking paper.

Optional: Spray or brush the patties with olive oil.
5Bake in the middle of the oven for 10 minutes. Flip the patties over and bake for another 5 minutes.
6Add patties to a plate. Serve with a side of yogurt mayo.
