Cauliflower Steaks With Tahini Dressing

500 g cauliflower
½ tbsp olive oil for roasting

Tahini Dressing:

30 ml ~ 2 tbsp water
30 g ~ 2 tbsp tahini
15 ml ~ 1 tbsp apple cider vinegar
¼ tsp salt

Optional Garnish:
1 tbsp fresh parsley
1 tsp sesame seeds

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut cauliflower in half then cut two slices from the middle so you have two thick steaks. Place the rest of the cauliflower in a bag and keep in the fridge for other recipes (soup, gratin etc). Place the cauliflower steaks on top of a baking tray lined with baking paper. Lightly coat or spray with olive oil.
2Roast in the middle of the oven for 20 minutes. Flip the steaks over and roast for another 10 minutes.
3In the meantime, make the dressing. Add tahini, water, vinegar and salt to a jar or a cup.
4Whisk together until smooth using a mini whisk or an electric mini milk frother. Set aside.
5Transfer steaks to plates.
6Drizzle with the dressing.
7Garnish with fresh parsley and sprinkle with sesame seeds.
