Cauliflower Nuggets

300 g frozen cauliflower
60 g oat flour or ground oats
8 g ~ 1 tbsp nutritional yeast

Salt & Spices:
1 tsp garlic powder
1 tsp onion powder
½ tsp ground coriander
¼ tsp ground cumin
½ tsp salt

Optional:
200 g yogurt mayo

7 oz yogurt mayo

Steps
1Preheat the oven to 180°C (360°F) Fan. Arrange frozen cauliflower on top of a baking tray double lined with baking paper, in a single layer.
2Roast in the middle of the oven for 20 minutes.
3Transfer to a small mixing bowl.
4Mash with a fork or blend with an immersion blender.
5Add oat flour, nutritional yeast, salt and spices.
6Mix to combine using a spoon, a spatula or your hands (wear a food grade grove).
7Split the mix into 12 portions, roll each into a ball and arrange on top of a baking tray lined with baking paper.
8Flatten and shape into nuggets.
9Bake in the middle of the oven for 15 minutes at the same temperature. Turn the nuggets over and bake for another 5 minutes.
10Transfer the nuggets to a plate. Serve with a side of yogurt mayo.
