Cauliflower Nuggets

500 g cauliflower
½ tbsp olive oil for roasting
60 g oat flour or ground oats
15 g nutritional yeast

Salt, Herbs & Spices:
1 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp ground coriander
½ tsp ground cumin
½ tsp salt

Optional:
200 g yogurt mayo

1 cup ~ 7 oz yogurt mayo

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut cauliflower into bite-sized florets. Arrange on top of a baking tray lined with baking paper in a single layer. Drizzle or spray with olive oil and mix to coat.
2Roast in the middle of the oven for 15 minutes. Stir with a spatula and roast for another 10 minutes.
3Transfer to a medium size mixing bowl.
4Mash with a fork or blend with an immersion blender. Add flour, nutritional yeast, salt, herbs and spices.
5Mix to combine.
6Split the mix into 12 portions and shape them into 12 nuggets. Arrange the nuggets on top of a baking tray lined with baking paper.
7Bake in the middle of the oven for 15 minutes. Turn the nuggets over and bake for another 5 minutes.
8Transfer the nuggets to a plate. Serve with a side of yogurt mayo.
