Creamy Garlic Spaghetti

160 g spaghetti

Sauce:
70 g raw cashews
2 medium onions, diced
6 cloves garlic
120 ml milk, soy or cashew
½ tsp salt

2 tbsp spring onions
¼ tsp ground black pepper

Steps
1Add cashews, diced onion and peeled garlic cloves to a medium-sized saucepan. Cover with water and bring to a boil. Reduce heat to low and simmer for 15 minutes. Drain.
2Add cooked cashews, onion and garlic to a blender. Add milk and salt. If you want it to have a “garlic bite”, add two fresh garlic cloves.
3Blend until smooth and set aside.
4In the meantime, fill a large cooking pot with water. Bring to a boil and add spaghetti. Reduce heat to medium and boil spaghetti for 10 minutes or until soft and cooked through. Drain.
5Add the cashew sauce to the drained spaghetti.
6Mix well and transfer to plates.
7Garnish with spring onions and freshly ground black pepper.
