Carrot Salad With Carrot Ginger Sauce

4 medium carrots
1 tbsp sesame seeds

Sauce:
120 ml water
30 g cashews
15 g ~ 1 tbsp fresh ginger
15 ml ~ 1 tbsp apple cider vinegar
15 ml ~ 1 tbsp agave or maple syrup

Steps
1Peel all the carrots. Roughly chop up one carrot. Add 1 carrot, water, cashews, ginger, vinegar and syrup to a blender (small cup).
2Blend until smooth ~ 60 seconds. Set aside.
3Grate the rest of the carrots using a coarse grater and add to a mixing bowl.
4Add the sauce.
5Mix to combine.
6Transfer to a plate and sprinkle with sesame seeds.
