Carrot Cake Bites

100 g ~ 2 small carrots, grated
60 g oat flakes
30 g walnuts
40 g ~ 2 Medjool dates

Steps
1Peel and grate the carrots using a coarse grater, add to a mini food processor.
2Add oat flakes, walnuts and dates.
3Blend until combined and dough-like.
4Transfer the mix onto a flat clean surface or a sheet of baking paper.
5Split in two, then split each portion in two, then split again - until you have 8 equal portions. Roll each into a ball.
6Transfer to a serving plate. Keep cling-filmed on in a tupperware in the fridge for up to 7 days.
