Roasted Broccoli & Mushrooms

400 g oyster mushrooms
400 g frozen broccoli
½ tbsp olive oil for roasting
Sauce:
1 tbsp soy sauce
2 tbsp water
1 tbsp sesame seeds
2 cloves garlic, crushed
½ tbsp agave syrup

Steps
1Preheat the oven to 200°C (400°F) Fan. Take broccoli out of the freezer and leave to defrost. Shred oyster mushrooms into strips using your hands and add them to a baking tray lined with baking paper. Drizzle or spray with olive oil and mix to combine.
2Roast in the middle of the oven for 20 minutes.
3Move mushrooms to the side of the tray. Cut broccoli into bite-sized pieces and add them next to the mushrooms.
4Roast for another 10 minutes.
5In the meantime, make the sauce. Add soy sauce, water, sesame seeds, crushed garlic and syrup to a small saucepan.
6Bring to a boil and set aside.
7Mix broccoli and mushrooms and add the sauce. Mix to coat.
8Transfer to plates.
