Banana Bread

180 g all-purpose wheat flour
1 tsp cinnamon
1 tsp baking powder
½ tsp baking soda
¼ tsp salt

Wet:
400 g ~ 4 small ripe bananas
70 ml coconut oil, melted

Filler:
40 g ~ 6 dried dates, chopped
40 g chopped walnuts
40 g chocolate chips

⅓ cup coconut oil, melted

Filler:
6 dried dates, chopped
¼ cup chopped walnuts
¼ cup chocolate chips

Steps
1Preheat the oven to 180°C (360°F) Fan. Add bananas to a small mixing bowl. Mash using a fork or your hands (use a food-grade glove). Set aside.
2Combine all of the dry ingredients. Add flour, cinnamon powder, baking powder, baking soda and salt to a medium sized mixing bowl.
3Whisk to combine. Add mashed bananas and coconut oil.
4Mix to combine using a spoon or a spatula.
5Add chopped dates, chopped walnuts and chocolate chips.
6Mix to combine.
7Line a baking loaf with baking paper (cut one in 4 for the perfect fit). Transfer the mix to the loaf and flatten with a spoon or a spatula.
8Bake in the middle of the oven for 40 minutes. Allow to cool completely before slicing.
9Cut into 10 slices and transfer to a serving plate or freeze individually for later.
