Arugula, Avocado & Orange Salad

2 small oranges
120 g ~ ½ medium avocado
1 tbsp pumpkin seeds (optional)

Steps
1De-stone and peel the avocado. Set aside. Cut the tops of the oranges, then cut off the sides. Set aside.
2Add arugula to a serving plate.
3Slice avocado and add to the arugula.
4Quarter the oranges and add to the bowl. Squeeze the juice from the peel over the salad.
5Season for taste (optional). Mix to coat and top with roasted pumpkin seeds, if using.
