Apple Carrot Cookies

Ingredients

240 g ~ 2 medium apples, grated
100 g ~ 2 small carrots, grated
60 g oat flour or ground oats
60 g almond or peanut butter
½ tbsp baking powder
30 g walnuts

Spices:
1 tsp cinnamon
½ tsp ginger powder
⅛ tsp ground clove
⅛ tsp ground nutmeg

¼ cup walnuts

Steps
1Preheat the oven to 200°C (400°F) Fan. Cut top and bottom off the apples. Peel the apples and the carrots.
2Grate both using a fine grater and add to a mixing bowl. The apple will turn into a puree.
3Add nut butter.
4Mix to combine. Add flour, baking powder and spices.
5Mix to combine.
6Scoop ⅛ of the batter onto a baking tray lined with baking paper. Repeat until you have 8 portions.
7Flatten each with a spoon and press walnuts into each one.
8Bake at the bottom of the oven for 20 minutes. Allow to cool on the tray.
9Transfer to a plate.
