How to Make Healthy Melted Cheese

You can make a super easy, high protein melted cheese for pizza or toast in minutes using potato starch and non-dairy milk. It’ll be half the Calories and half the fat of regular mozzarella and it’ll also be very high in all B vitamins, Vitamin E & K, Calcium, Zinc and Omega 3.

To make it, you will need 5 ingredients: non-dairy milk, nutritional yeast, potato starch, olive oil and salt. Use neutral milk like soy, oat or cashew. Add a bit of turmeric powder to it for color, if you have it, and for additional anti-inflammatory and cancer-fighting perks. 

Ingredients

120 ml ~ ½ cup milk | soy, oat or cashew
15 g ~ 2 tbsp nutritional yeast
15 g ~ 1 ½ tbsp potato starch
15 ml ~ 1 tbsp olive oil
½ tsp salt
¼ tsp turmeric powder (optional)

Instructions

1. Add all of the ingredients to a small saucepan. Add potato starch last. 
2. Whisk to combine.
3. Set heat to medium (induction #5) and whisk continuously until it begins to thicken. Turn off the heat and continue whisking until very smooth. Potato starch thickens really quickly and adds cheese-like stretch to the roux. And it’s done. You can now use it for pizza, grilled cheese or to dip chips in. 

This recipe makes roughly 170 g ~ 6 oz of melted cheese. It’s enough to cover a pizza.
