Oat Flax Tortilla

120 g oat flour or ground oats
240 ml hot water
20 g ground flax seeds
¼ tsp salt

Steps
1Add oat flour (or ground oats) to a small mixing bowl.
2Whisk to distribute and add hot water.
3Mix with a spoon and set aside to cool down ~5-10 minutes.
4Place a piece of baking paper on a flat surface. Scoop out 4 equal portions of the dough onto the sheet.
5Wet your hands, roll each portion into a ball.
6Place another sheet of baking paper over them. Press down with the flat side of a mixing bowl or a rolling pin, spreading them as thinly as possible.
7Carefully peel off the top sheet and cut the bottom sheet into four sections.
8Preheat a frying pan over high heat and lightly oil it. Place one tortilla, paper side up, into the pan.
9Fry for 45-60 seconds, then carefully peel off the paper and flip the tortilla. Continue cooking until golden. Repeat with the rest.
10Transfer to a plate and enjoy as is or use in other recipes.
