Mushroom Bacon

400 g mushrooms, portobellos
1 tsp olive oil for frying

BBQ Sauce:
30 g applesauce
30 g tomato paste
½ tbsp maple or agave syrup
1 tsp smoked paprika
1 tsp vinegar, any type
½ tsp onion powder
½ tsp garlic powder
½ tsp salt

Steps
1Clean the mushrooms and remove the stems.
2Slice into thick strips.
3Heat 1 tsp olive oil in a large frying pan over medium heat. Add the mushroom strips.
4Fry for a few minutes on each side until golden.
5In the meantime, make the BBQ sauce. Add applesauce, tomato paste, syrup (if using), smoked paprika, vinegar, onion powder, garlic powder, and salt to a small mixing bowl.
6Whisk to combine.
7Brush or coat each mushroom strip with BBQ sauce.
8Return the coated mushrooms to the pan. Fry for a few minutes on each side until caramelized and slightly crispy.
9Transfer to a serving plate. Serve immediately or add to other dishes.
