Mince Broccoli Salad

Ingredients

500 g frozen broccoli
150 g mixed greens
2 tbsp pumpkin seeds, roasted (optional)
ground black pepper for taste

Mince:
120 g dry soy mince
400 g chopped tomatoes
20 ml agave or maple syrup
½ tsp garlic powder
½ tsp onion powder
½ tsp salt

Yogurt Mayo:
200 g plain yogurt | soy, oat or cashew
1 tsp vinegar, any
¼ tsp salt

14 oz chopped tomatoes
1 tbsp agave or maple syrup
½ tsp garlic powder
½ tsp onion powder
½ tsp salt

Yogurt Mayo:
7 oz plain yogurt | soy, oat or cashew
1 tsp vinegar, any
¼ tsp salt

Steps
1Prepare the mince. If using dry plant-based mince, rinse it thoroughly under running water using a sieve to rehydrate it. Shake the sieve well to drain excess water. Skip this step if using ready-to-eat plant-based mince.
2Cook the mince. Add mince, canned tomatoes, syrup, onion powder, garlic powder, and salt to a small saucepan.
3Mix to combine. Stir-fry over low heat for 2-3 minutes, stirring occasionally, until heated through. Set aside.
4Heat a large non-stick pan over medium heat. Add the frozen broccoli.
5Sauté for 5 minutes, stirring occasionally, until heated through. If needed, cut the florets into bite-sized pieces. Stir-fry for another 2–3 minutes.
6Make the Yogurt Mayo. Add yogurt, vinegar, and salt to a small mixing bowl.
7Whisk to combine. Set aside.
8Add mixed greens to a serving bowl.
9Add the broccoli.
10Drizzle with yogurt mayo.
11Top with cooked mince.
12Sprinkle with pumpkin seeds (if using) and season with ground black pepper to taste.
