
Eggplant With Mince & Cheese

2 large eggplants
80 g dry soy mince
400 g ~ 1 can chopped tomatoes
20 ml maple or agave syrup
½ tsp onion powder
½ tsp garlic powder

Cheese:
240 ml milk | soy, oat or cashew
15 g potato starch
15 g nutritional yeast
15 ml olive oil
½ tsp salt
¼ tsp ground turmeric

½ tsp garlic powder

Cheese:
1 cup milk | soy, oat or cashew
2 tbsp potato starch
2 tbsp nutritional yeast
1 tbsp olive oil
½ tsp salt
¼ tsp ground turmeric

Steps

1Preheat the oven to 220°C (440°F). Line a baking tray with baking paper. Add whole eggplants to it.

2Bake for 40 minutes, or until soft and fully cooked.

3If using dry mince, rinse well under running water using a sieve. Drain excess water. Skip if using ready plant-based mince.

4Add mince, canned tomatoes, syrup, onion powder, garlic powder, and salt to a small bowl.

5Mix to combine. Set aside to soak.

6Make the cheese. Add milk, nutritional yeast, olive oil, garlic powder, onion powder and salt to a small saucepan. Add potato starch last.

7Whisk to combine.

8Set heat to medium (induction #5) and whisk continuously until it begins to thicken. Turn off the heat and continue whisking until very smooth. Set aside.

9Remove the eggplants from the oven. Peel off skin and place fillet into a casserole or oven-safe dish.

10Spread the soaked mince over the eggplant base.

11Bake for 10 minutes.

12Spread the cheese sauce using a spatula and sprinkle with black pepper.

13Bake another 5 minutes.

14Add to plates and garnish with fresh parsley.
